New Recipes

For the past few weeks we've been trying to make some new recipes dinner to liven things up. Here are a few we've tried so far:

The taco soup was good, I had to omit the Ranch and the cheese because of Grace's allergies, but it was still yummy!

Pizza Soup
So good! I didn't add the cheese again, and I didn't use mushrooms because neither Cole nor I like them. I added extra pepporoni and sausage to make up for the mushrooms.

Cole and I don't like meatloaf but we both loved this recipe. I used ground turkey and it stayed very moist. Grace devoured this!

Rotisserie Style Chicken
We've made this before but it's still very yummy. We used the leftover chicken to make a stir fry the next night.

Busy Day Hash
So easy! I didn't use greenbeans because of Grace's allergy, instead I doubled the corn. Grace loved this!

Vegatarian Tofu Lasagna
Don't let the name scare you. I've been looking for a dairy free lasagna recipe for a while and came across this last week. It was so good! I don't like tofu, but you couldn't even taste it. Grace loved it! I even got Cole to try it and he liked it.We had it for lunch almost every day! I thought Grace would be sick of it, so I gave her something else for lunch Friday, while I had leftover lasagna again. Well she protested until I gave her lasagna as well. I will be using this recipe to make a lazy man's lasagna to bring to Thanksgiving for Grace and I (and anyone else brave enough to try it!)

These 2 recipes are on the menu to try this week. I've never had gnocchi or falafel, but though the recipes sounded good. I'll let you know how it goes!

Pumpkin Gnocchi

I’m lactose intolerant and have always dreaded the holidays, as all the food seems to be loaded with dairy. After a recommendation of one of my friends, I found this nutrition coach named Rose Cole who has a holiday cookbook and has tons of dairy free recipes. Her site is www.RoseCole.com/HolidayCookbook
